The wine is vinified at 21? in underground glass lined vats, no malolactic fermentation takes place in order to retain the freshness and the purity of the fruit flavours, the wine then rests on its lees throughout the winter giving a wonderfully rounded texture. The wine is not fined and just receives a light filtration prior to bottling. Each year Domaine des Hauts P?mions is chosen by fellow growers to represent the best of Muscadet sur Lie this is no mean accolade & Christophe is rightly proud of winning the Gold medal in Paris for his 2008, 2009, 2010 and 2011 vintages! A clear demonstration of the outstanding quality of these wines. Fresh lemon & delicate floral aromas with a hint of sea salt and subtle yeasty notes in the biuquet are followed by a crisp dry palate that i s deceptively complex. The palate is well rounded with crisp citrus & apple flavours enhanced by hints of brioche before the clean tangy finish. A wonderfully balanced wine. Melon de Bourgogne (Muscadet) 100% Muscadet is renowned locally as being the perfect oyster wine, other fish & seafood dishes such as lobster, shrimp & white fish either grilled or with a simple lemon or creamy white sauce are also fantastic as are light cheeses, vegetable dishes & salads.
