Small, healthy bunches are selected from the oldest vines (some are over one century old), matured as long as possible in the vineyard to obtain slightly overripe fruit, and carefully handpicked. It takes 2 kilos of grapes to produce a 50cl bottle of Vin de Paille, compared to 1.5 kilos to produce one liter of our plot selection "Au Coeur des Si?cles" Hermitage white, for instance. Vin de Paille is also produced in the Jura region - the Cave de Tain Vin de Paille "shows an exceptional balance between fruit, sugar and freshness." The 1995 vintage shows intense aroms of camomile, honey and exotic fruits. High concentration of flavours and beautiful balance - powerful but fresh.
