This cuv?e began as three separate fermentations of the three pickings of fruit listed above, all spontaneous ferments in tank. Post ferment we brought together the Dabinett and Yarlington Mill into tank, leaving that to mature for almost a year. The field blend was racked partly into barrel. In January 2020 one of the barrels was blended into the tanks and sent to bottle with a small sugar addition to induce a second fermentation. Full of peach and orange, blossom and clove spice and gorgeous soft tannins. Other Cider Bottles |
