Simple cidermaking followed, with milling and maceration before spontaneous fermentation in tank. Before fermentation finished, the liquid was moved into ex-white Burgundy barrels to mature on fine lees for eight months. This has emerged as wine like as cider can be. Pale yellow with green highlights, it has a very attractive nose of stone fruits, sweet apple subtle nuttiness. It?s pristine and clear, glossily textured in the mouth and laden with ripe melon, kiwi fruit, freshly cut yellow apples, aniseed and mountain herbs, as well as distinct nut skin note at the finish.
